This tart is a fresh and tasty dish, perfect for a light lunchtime snack or part of a summer buffet. Traditional halloumi is made from unpasteurised sheep and goat’s milk and originates from Cyprus. 

Sheep milk is the most nutritious milk on sale in the world today, containing more calcium and zinc than cow’s milk.  

Halloumi has a delicious salty flavour and is gloriously transformed when grilled or lightly fried till golden brown
