This is delicious with the apple adding just enough sweetness. Serve with roasted asparagus for a treat!

In the 80s, while working for Farmers Weekly, my colleague Josie and I visited Livestock markets and Auctioneers across the country.  We spent time at Sparsholt Agricultural College, attended lectures, milked the cows at the crack of dawn, washed down the milk parlour and witnessed the dark events at an abattoir. 

We learned of the benefits of giving pigs the run of the orchard. They had the health benefits of eating the fallen fruit and they fertilised the ground. Squealer, in Animal Farm, tells the other animals that it has been “scientifically proven that milk and apples are essential to the well-being of a pig”
